Mango Garlic Bacon Wrapped Chicken
This was a huge hit! We grilled it but I’m sure it would be good baked too.
Ingredients
- 4-6 Chicken thighs
- 1 C soy sauce
- 1 C mango daiquiri mixer
- 2 TBS Garlic Powder
- 1 TBS Mustard
- 2 pcs bacon per thigh
Combine the soy sauce, mango mixer, and garlic powder in a 2 quart casserole container. Marinade the chicken for at least 30 min but the longer the better. Reserve the marinade. Wrap each thigh with 2 pcs bacon.
Grill on indirect heat for about 30 min or until 165 degrees F. Baste with marinade on each side. Flip half way through.
While chicken is cooking, put marinade in a pot and stir in the mustard and bring to a boil. Reduce to low heat and cook down until it gets thicker.
When chicken is done, coat with sauce and serve.
