Ice Cream Sandwich Cake
Items and Ingredients:
Spring form pan 12”, cutting board & knife, rubber spatula, optional cardboard cake round that fits your pan.
2 Oreo pie crusts
1 stick of butter melted
2 dozen ice cream sandwiches (we used Neapolitan Walmart brand)
2 containers cool whip
1-2 packages instant chocolate pudding mix
1/4-1/2 cup milk
First make icing:
Thaw 2 containers of cool whip. Stir in 1 packet of chocolate pudding mix. Stir in milk as needed to get a smooth texture but not too runny. Add more pudding and milk as needed for flavor and consistency. Place in refrigerator until needed.
Make crust:
Crush the Oreo crusts in a bowl. Mix in 1 stick melted butter
Put the mixture along the bottom sides of the spring form pan. Work the mixture up the entire sides of the pan all the way to the top rim. Use your fingers or a rubber spatula. Crust on the bottom isn’t necessary and adds too much height.
Assemble the cake:
Make 3 layers of ice cream sandwiches in the pattern below. Use a thin layer of icing between each layer. Fill in any gaps with icing as well. After the 3rd layer, add a normal coat of icing and decorate as you wish. Cover with plastic wrap and freeze.
To serve: Remove from freezer 20 min before serving. Remove the ring form as soon as it comes out of the freezer. Place the cake on whatever you plan to serve it from. You won’t really be able to move it around much once it starts to thaw if it’s not on a platter or something. Cut in slices and enjoy!
