Carl’s Return of the Mac (and cheese)

Yall ain't ready for my mac and cheese. It's on a completely different level. 

5 different kinds of cheese, cooked in the oven (not on the stove), crispy on the bottom, gooey on the top. My mom told me the dish deserved its own name, and I thought about it for a bit. But then the answer was so obvious: Return Of The Mac.

--RETURN OF THE MAC RECIPE--

1. Chop up your cheese (smoked gouda, colby jack, pepper jack, extra sharp cheddar, hand-grated parmesan)

2. Butter that casserole pan up somethin fierce

3. Boil up all them elbows to a hard al dente, since they'll cook more in the oven

4. Drain the elbows, drop 4 pats of butter on em, season them bad bois with some salt and pepper

5. Get a cup of whole milk, beat 4 eggs, then pour em over your elbows and massage it in like you mean it

6. Layer your elbows first, then your cheese in the casserole pan. First layer is smoked gouda. Second layer is your colby jack and your pepper jack. Third layer is your extra sharp cheddar. Final layer is the hand-grated parmesan.

7. Drop that sumbitch in the oven at 375 for about an hour. When your cheese starts bubbling real good and browning, turn your oven temp to 200 and let it sit until everything else is ready. 

8. Take it out and serve it hot. Tastes even better with some sriracha

Crockpot Chili

From Barefoot Neighbor Place ingredients in crockpot in this order: 2# LEAN ground beef (raw) Season beef w: S&P, Chili Powder, & Garlic Powder 1 chopped onion 1 chopped bell pepper 1 chopped deseeded jalapeño 1 small can green chilis 1 can pinto beans drained and washed 1 can black beans drained and washed 1 can beef stock 1 can diced tomatoes 6 oz can cento tomato paste 1 packet chili seasoning Stir everything on top (leave beef alone) Cook on high 4 hours or 6-8 on low  Half way through, chop up beef and stir into chili season more if needed (s&p, hot sauce, etc) Serve w Fritos, sour cream & shredded cheese

Creamy Chicken Pot Pie (No peas or Carrots 😳)

Creamy Chicken Pot Pie *Makes 1-3 Pies* I love a good chicken pot pie. Traditionally they aren’t particularly creamy and they usually involve a bag of frozen peas & carrot mix. However, Julie doesn’t eat either so I subbed the two veggies she does eat - green beans and corn. You can use fresh or frozen veggies.
