Krystal Burgers on the Griddle

Ingredients 

  1. 1 lb ground beef (80/20 blend is recommended) 
  2. 1/2 cup dried minced onion 
  3. 1/4 cup water, or enough to rehydrate onions 
  4. 12 small slider buns or yeast dinner rolls 
  5. 12 slices American cheese 
  6. 12 dill pickle chips 
  7. Yellow mustard, to taste 
  8. Salt and pepper, to taste

InstructionsPrepare the patties 

  1. Roll the ground beef out onto a sheet of parchment paper until it's very thin, about 1/4 inch thick. 
  2. Using a pizza cutter or knife, score the beef into 12 small squares. Do not separate them. 
  3. Place the parchment paper with the scored beef onto a baking sheet and put it in the freezer for at least 30 minutes, or until the patties are firm. [12

Rehydrate the onions 

  1. Combine the dried minced onion with water and let it sit for about 15 minutes, until the onions are fully rehydrated and plump. [367

Cook the burgers 

  1. Preheat a flat top griddle or a large skillet to medium-high heat (around 375°F). Add a little butter or oil to the surface. 
  2. Spread the rehydrated onions and their liquid evenly across the hot surface. 
  3. Place the frozen, scored beef patty sheet directly on top of the bed of onions. The onions will provide the steam as they cook. 
  4. Sprinkle the beef with salt and pepper. 
  5. Cook for about 3 minutes, then use a large spatula to flip the entire sheet of patties. 
  6. Once flipped, lay the bottom half of the slider buns on top of the burgers. Then, place the top halves of the buns on top of those. 
  7. Cover the burgers and buns with a large lid or metal dome to trap the steam and heat. 
  8. After about 1 minute, the buns should be soft and warm. Lift the cover and remove the buns from the griddle. 
  9. Place a slice of American cheese on each patty, allowing it to melt quickly. [12368

Assemble and serve 

  1. Place the patty with melted cheese and a spoonful of the cooked onions on the bottom half of a bun. 
  2. Add a couple of dill pickle chips and a squirt of mustard. 
  3. Place the top bun on the burger and serve immediately. [1
