INGREDIENTS
- 1 cup unsalted butter, room temperature
- 1/4 cup granulated sugar
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 2 egg yolks
- 1/2 teaspoon vanilla
- 2 cups all-purpose flour
- 1/2 cup sparkling sugar, for rolling
PREPARATION
- In a large bowl, add butter, granulated sugar, powder sugar, and salt and beat until smooth, about 1 minute.
- Mix in egg yolks one at a time, followed by the vanilla.
- Slowly add in flour until just combined. Form dough into a rough ball and chill in the fridge for 30 minutes.
- Once chilled, divide the dough into two even portions and form into logs with round or square sides. Wrap tightly with plastic wrap and freeze for a minimum of 2 hours.
- When ready to bake, preheat oven to 325 degrees F and line a baking sheet with parchment paper.
- Sprinkle sparkling sugar on a large plate and roll the sides of the logs in the sugar.
- Place logs on a cutting board and slice into cookies about 1/3 inch thick.
- Place on cookie sheet and bake for 7-10 minutes.
- Allow cookies to cool for about 5 minutes, then transfer to a cooling rack.
